Lemon Ginger Honey Drink

1 small container honey
2 cups water
Rind of 1 lemon (more if you'd like it extra lemony)
About an inch of fresh ginger, grated (more if you want it gingery)
1 cup lemon juice

Heat honey, water, lemon rind and ginger in a pot until boiling. Simmer for a few minutes. Remove from heat, add juice. Pour into a sterilised 1 litre glass bottle.

I put around half a centimetre into a mug and fill with hot water. I haven't experimented with boiling the mixture for longer to make it stronger - wonder whether that would work? You can also strain it to get rid of the gingery bits, but I don't bother.
